As I sit here writing this I am indulging in one of my favorite snacks…cookies. Yep, those cookies, the ones right there – up above. And they are outstanding! If you even remotely like anything about coffee at all, you will adore these Chocolate Chunk Coffee Cookies! They’re the perfect flavor combination of coffee and chocolate….and they smell ooohhh sooooooo gooooood!

Loaded with chocolate chunks and rich, dark coffee grounds, these scrumptious cookies are bursting with chocolate-y, coffee flavored goodness! When I first decided to add coffee grounds right into the batter, I was a bit worried they would have a weird gritty texture. But they don’t. Instead, they are incredibly delicious with slightly crisp edges and soft, chewy centers.

Using Dunkin’ Donuts Dark Roast is what makes these cookies taste so good. It’s bold enough to provide just the right amount of coffee flavor, while the semi-sweet chocolate chunks add the perfect amount of chocolate-y sweetness. If your cup of coffee could magically transform into a cookie, this cookie would be it!  Ready to see how to make these delectable Chocolate Chunk Coffee Cookies?

Chocolate Chunk Coffee Cookies

Ingredients

2 1/4 cups all-purpose flour
1/3 cup Dunkin’ Donuts Dark Roast coffee grounds
1 teaspoon baking soda
1 teaspoon sea salt or kosher salt
3/4 cup granulated sugar
1/2 cup packed light brown sugar
1 cup unsalted butter, at room temperature
2 large eggs, at room temperature
2 teaspoon vanilla bean extract
1 – 2 cups semi-sweet chocolate chunks

Instructions

1. Preheat the oven to 350°F and arrange a rack in the middle. Line baking sheets with parchment paper or silicone baking mats. These Kitzini silicon mats are my favorite. They make my baking life SO much easier in the kitchen!

2. In a large bowl, add the flour, baking soda, salt, and coffee grounds. Whisk to combine. Set aside.

3. Using another bowl, and either an hand mixer or stand mixer fitted with the paddle attachment, cream together the butter and sugars for 2 to 3 minutes until fluffy and light in color.

4. Scrape down the sides and bottom of the bowl, then add the eggs and vanilla extract. Beat for 2 more minutes until completely incorporated.

5. Next, slowly add in the flour mixture and mix until just combined and moistened through.

6. Then, using a spatula, fold in the chocolate chunks.

7.  Drop tablespoon-size balls of dough about 2 inches apart on the baking sheets and place into the oven.

8. Bake for 10 to 14 minutes – making sure to rotate the sheet halfway through. When the bottoms are lightly browned and tops are puffy and set, remove from oven. Remember, the secret to extra soft and chewy cookies is under-baking by just a few minutes. The cookies will look super soft but they’ll continue cooking after you remove them from the oven.

9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

And that’s it! Easy, fast and delicious! And whatever cookies don’t get eaten right then and there, can be stored in an airtight container.
