I also love the holiday parties, the traditions, and my personal favorite – the fun holiday crafts and delicious recipes to make!
Speaking of the traditions, every year I make a point to #ShareHolidayJoy with my friends and neighbors by creating a handmade gift. Most of the time this involves baked goods and another fun treat. Before you get started, you will need to head to your local Sam’s Club to pick up a 24 pack of 355ml glass bottles of Coke de Mexico Coca-Cola. I found it towards the front corner of the store, near the bakery where all of their drinks are located.
The 24 pack is the perfect size for all your holiday entertaining needs, whether it’s for cooking, parties or a holiday dinner with the entire family! Plus, Sam’s Club has a special holiday price of $3.98 on their 4 pack of 2-liter Coke and Diet Coke! That price is good for the whole holiday season! Now, let’s get cooking!
Coca-Cola Christmas Cupcakes with Chocolate Coca-Cola Icing
For the Cupcakes
1 cup Coca-Cola (Coke de Mexico works best!)
1/2 cup unsweetened cocoa powder
4 tbsp. unsalted butter, cut into pieces
1/2 cup plus 2 tbsp. granulated sugar
1/4 cup firmly packed dark brown sugar
1 cup all-purpose flour
1/2 tsp. plus 1/8 tsp. baking soda
1/2 tsp. salt
For the Icing
1/2 cup butter
1/4 cup cocoa
1/3 cup Coca-Cola (Coke de Mexico is best!)
3 cups powdered sugar
1/2 tsp vanilla extract
Preheat the oven to 350°F. Line a cupcake pan with baking papers.
In a small saucepan, add the Coca-Cola, cocoa powder, and butter.
Stir over medium heat until butter is melted.
Add the sugars and whisk until they are completely dissolved.
Remove the mixture from the heat and let it cool.
Once the mixture has cooled, in a separate large bowl, whisk the flour, baking soda, and salt together.
In another, smaller bowl, whisk egg until just beaten.
Now whisk the egg into the cooled cocoa mixture.
Follow that with the flour mixture, adding just a little bit at a time, and stirring gently until completely combined.
Using a small measuring cup or spoon, pour the batter into the cupcake papers until each one is about 3/4 full. Tip: use the foil lined cupcake wrappers as a way to keep the batter from sticking.
Place in oven and bake for 25 minutes or until the cake springs back when gently pressed in the middle.
Allow cupcakes to cool completely before frosting.
