ProFreshional Avocado Slicer

Finally I have a tool that makes slicing an avocado a cinch!  The ProFressionals Avocado Slicer has a slicer on one end, and a pick on the other to easily remove the pit. The handle is extra wide and made of a soft-touch plastic that provides a comfortable, non-slip grip. All you do is slice the avocado down the middle, use the pick to remove the pit. Then hold one half of the avocado in one hand and take the slicer and run it down the skin of the of the avocado through the meat and voila, sliced avocado!

Citrus Zester

The ProFreshionals Citrus Zester is also made of heavy-duty, industrial grade plastic with an extra wide soft-touch plastic handle that offers a sturdy and comfortable non-slip grip. It has a pointed notch on it that you can stick in the skin to get a starting point for peeling without you having to use your nails. To zest, you simply place the head flat against the skin and pull downwards applying a fair amount of pressure. The result is perfect citrus zest you can use for flavoring and garnishing.

Citrus Reamer

Another practical, easy-to-use tool made by the ProFreshionals brand, this citrus reamer has a ribbed head perfect for juicing halved citrus fruits. It’s handle is also extra-wide and made of that comfortable, soft touch plastic for great control and stability. Simply slice your fruit in half, and using the head of the reamer twist it into the fruit. If you do not want seeds or pulp, hold it over a fine strainer while juicing the citrus.

Now I want to share with you one of my family’s favorite weekend meals, made with the help of the tools above and tasty avocado!

A Delicious Chicken, Avocado, Bacon and Tomato Recipe

Serves: 2 to 4

Prep Time: 15 to 20 minutes

Total Cook Time: 10 to 15 mins.

Ingredients

8 medium flour tortillas

1 large boneless skinless chicken breast (or 2 small), cut into bite size pieces

3/4 cup sweet onion, diced

8 slices bacon

1 avocado diced

1 1/2 cups Monterey Jack cheese, shredded

3/4 cup tomato, diced

Juice of 1/2 lime

Sour cream

Salt

Pepper

Garlic

Butter

Instructions

1.Cut chicken into bite-sized pieces. Place to the side on a dish.

2. Season chicken with salt, pepper and garlic powder, and then sprinkle with fresh lime juice.

3. Dice avocado, place on separate dish and sprinkle with fresh lime juice.

4. Dice tomato, keeping separate from other ingredients.

5. Dice onion, also keep separate.

6. Fry bacon until crisp, then set aside to drain on paper towels.  Pour out drippings being sure to save 1/2 tbsp. worth in the skillet.

7. Add onion to the 1/2 tbsp of bacon drippings and cook until tender.

8. Add the chicken and cook until juices run clear and chicken is light golden brown.

9. Remove from skillet and set aside to rest 3 to 5 minutes.

10. While chicken rests, crumble or chop bacon into tiny pieces and place in a separate bowl.  I found it easiest to have all ingredients in a separate bowls so I could grab each one as needed.

11. Wash skillet to prepare for cooking tortillas.

12. Butter one side of first tortilla and place butter side down in cleaned skillet over medium heat.

13. Top with cheese first, the add some chicken, bacon, avocado and tomato.  If you wish, add dollop of sour cream, too.

14. Top with a little more cheese.

15. Take a second tortilla, butter one side, then place butter side UP on top of ingredients.

16. Using a spatula, flip entire quesadilla so the tortilla you just added is now butter side down in the skillet.

17. Press with spatula on the top of the quesadilla for a few seconds.

18. Cook for 1 to 2 minutes then flip. Press down with spatula again, cooking for another 1 to 2 minutes or until both sides are golden brown.

19. Remove quesadilla from skillet. Place into tortilla warmer or cover with wax paper to keep warm.

20. Repeat above steps until all quesadillas are made.

21. Using a pizza slicer, cut each quesadilla into quarters.

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 8 medium flour tortillas
  • 1 large boneless, skinless, chicken breast - cut into bite-sized pieces
  • 1 avocado, sliced
  • 3/4 cup sweet onion, diced
  • 3/4 cup tomato, diced
  • 8 sliced bacon
  • 1 1/2 cups Monterey Jack, shredded
  • 1/2 small lime, juice only
  • Sour cream
  • Butter
  • Garlic
  • Salt
  • Pepper

Instructions

Preparing Fillings

  1. Cut chicken into bite-sixed pieces, then season with salt, pepper, garlic powder, and a sprinkle of fresh lime juice. Set aside
  2. Slice the avocado, sprinkle with some lime juice
  3. Dice tomato, then keep separate from other ingredients
  4. Dice onion, and keep it separate from other ingredients.
  5. In a skillet, fry bacon until crisp. Set aside on paper towel to drain.


Cook Chicken and Onion

  1. Pour out all drippings except 1/2 tbsp. from skillet.
  2. Add onion to the skillet with remaining drippings and cook until tender.
  3. Add in chicken with onion and cook until juices run clear and chicken is a light golden brown.
  4. Remove chicken and onion from skillet and allow to rest 3-5 minutes.
  5. While chicken is resting, chop or crumble bacon and place in a separate bowl.

Making Quesadillas

  1. Wash skillet in preparation for cooking quesadillas.
  2. Butter one side of first tortilla and place butter-side down in skillet over medium heat.
  3. Then, in this order, add cheese, some chicken, bacon pieces, avocado, and tomato. If you wish, add a dollop of sour cream, too.
  4. Take a second tortilla, butter one side, then place it butter side UP on top of ingredients.
  5. Using a spatula, carefully flip entire quesadilla so the tortilla you just added is now butter side down in skillet.
  6. Press top of tortilla with spatula for a few seconds, then allow it to cook 1-2 minutes, before flipping.
  7. Again, press top with spatula, then cook another 1-2 minutes or until both sides are golden brown.
  8. Remove quesadilla from skillet, place in tortilla warmer or cover with wax paper to keep it warm.
  9. Repeat above steps until all quesadillas are made.
  10. Using a pizza cutter, cut each quesadilla into quarters,
  11. Serve and enjoy!
