No Bake Chocolate Chip Cookie Dough Cheesecakes
Rich, smooth creamy cheesecake served on top of crunchy chocolate chip cookie dough crust, and topped with a golden brown chocolate chip cookie and a sprinkle of chocolate chips in these amazing No Bake Chocolate Chip Cookie Dough Cheesecakes.
- 12 chocolate chip cookies
- 2 tablespoons butter
- 2 8 oz packages cream cheese at room temperature
- 1/2 cup heavy cream
- 2 teaspoons vanilla extract
- 2/3 cup brown sugar
- 3/4 cup mini chocolate chips
- Mini chocolate chip cookies or larger cookies cut into pieces for topping
Using a food processor, blend the cookies with the butter in order to create the cookie dough crust.
Press a tablespoon and a half of this mixture into the bottom of each jar; making sure to press firmly so the mixture is nice and firm in the bottoms of the jars.
Next, using your mixer's whisk attachment, whip the cream cheese until smooth.
Slowly add in the brown sugar mixing until completely blended.
Then add the vanilla extract and the heavy cream. Whip until fluffy and light.
Next, stir in 1/2 cup mini chocolate chips.
Now spoon this mixture into the jars over the cookie crust.
Finally, top the jars off with a sprinkling of chocolate chips and a small cookie. Chill completely – at least an hour.
