Ingredients
For the Meatloaf
1tablespoonbutter
1tablespoonminced garlic
1onionchopped
1cupchopped celery
2eggs
2poundslean ground beef
1tablespoonCajun seasoning
1cupseasoned bread crumbs
3small slices of a celery stickor you can use a black olive - this will be used for the eyes and mouth
For the Sauce
1cupketchup
1/2cuppacked brown sugar
1teaspoonWorcestershire sauce
Instructions
Begin by dicing the onion and celery, and mincing the garlic.
Melt the butter in a saucepan over medium heat. As soon as the butter has melted, add in the chopped onion, celery and garlic. Cook and stir until the onion has softened and turned translucent, about 10 minutes. Transfer the vegetables to a mixing bowl, and allow to cool to just warm.
Preheat the oven to 350° F (175 degrees C). Place a sheet of aluminum foil onto a baking sheet, and spray with nonstick cooking spray.
Crack the eggs into the mixing bowl with the vegetables, and mix until the egg is smooth.
Add the ground beef, Cajun seasoning, and bread crumbs.
Mix with your hands until the mixture is evenly blended. Form the meat mixture into the shape of a stick man.
Bake in the preheated oven until no longer pink in the center, for about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
Meanwhile, prepare the sauce by mixing the ketchup, brown sugar and Worcestershire sauce in a bowl, stirring until the sugar is completely dissolved.
Once the meatloaf man is done, place the celery pieces (or olive halves) onto the head for eyes and a mouth, and pour about 2 teaspoons worth of the sauce onto the abdomen. Return to oven, and bake 10 more minutes.
Once finished, serve with a plastic knife impaled in the abdomen for effect.
Serve and enjoy!
Notes
**we always placed the remaining sauce on the table and anyone who wanted to add some to their meatloaf could.
