No Bake Chocolate Chip Cookie Dough Cheesecakes

Rich, smooth creamy cheesecake served on top of crunchy chocolate chip cookie dough crust, and topped with a golden brown chocolate chip cookie and a sprinkle of chocolate chips in these amazing No Bake Chocolate Chip Cookie Dough Cheesecakes.

  • 12 chocolate chip cookies
  • 2 tablespoons butter
  • 2 8 oz packages cream cheese at room temperature
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 2/3 cup brown sugar
  • 3/4 cup mini chocolate chips
  • Mini chocolate chip cookies or larger cookies cut into pieces for topping


  • Using a food processor, blend the cookies with the butter in order to create the cookie dough crust.
  • Press a tablespoon and a half of this mixture into the bottom of each jar; making sure to press firmly so the mixture is nice and firm in the bottoms of the jars.
  • Next, using your mixer's whisk attachment, whip the cream cheese until smooth.
  • Slowly add in the brown sugar mixing until completely blended.
  • Then add the vanilla extract and the heavy cream. Whip until fluffy and light.
  • Next, stir in 1/2 cup mini chocolate chips.
  • Now spoon this mixture into the jars over the cookie crust.
  • Finally, top the jars off with a sprinkling of chocolate chips and a small cookie. Chill completely – at least an hour.
