Making these delicious little sinful trifles is incredibly easy. All you have to do is whip up some pudding, color it (which requires a few drops of food coloring – easy peasy), crumble up the cookies and then layer both in some cute little cups or bowls. Top the trifles off with some whipped cream, followed by a dusting of green and gold sprinkles, and then crown them with an edible gold coin. That’s it!

Can You Make Mint Chocolate Trifles Ahead of Time?

St. Patrick’s Day Mint Chocolate Trifles can be made a day in advance. Just note: if you serve right after making, or within a few hours, the cookies will remain very crisp and crunchy.

If you serve the next day, however, the cookies will become softer. It doesn’t change the taste at all though, and it’s truly a personal preference.

In addition, I would not add the whipped cream until right before you serve these St. Patrick’s Day desserts. Otherwise, the whipped cream will begin to melt. And while it tastes amazingly delicious mixed in with the mint chocolate cookies and vanilla pudding, it doesn’t look as good. 🙂

Ingredients

  • 1 3.9 oz instant pudding mix, vanilla
  • 2 cups milk, for pudding
  • 12 mint creme Oreo's, crushed
  • whipped topping
  • 1-2 tbsp gold sprinkles
  • 1-2 tbsp green jimmies
  • 2-4 drops food coloring gel, green
  • 4 chocolate gold coins

Instructions

  1. Mix pudding according to instruction on the box. Mix in 2-4 drops of green food coloring at the same time you add the milk to the pudding mix. Refrigerate until ready to assemble.
  2. Chop the Oreos until crushed.

Assembling Mint Chocolate Trifles

  1. Layer the trifles in 4 trifle cups, mason jars, or mini bowls. Start with a layer of chopped Oreo cookies followed by a layer of pudding. Repeat, making sure you end with a top layer of crushed Oreo. Next add the whipped cream, followed by the green and gold sprinkles. Finish by inserting a chocolate gold coin into the whipped cream off to one side.
