Notice that there is no added oil or butter in these muffins? That’s because the natural oil in the peanut butter, combined with the eggs and banana, is all that’s needed!

You simply need:

  • quick-cooking oats – adds flavor, texture, and heartiness
  • ground flaxseed – adds texture quality, flavor, and nutrition.
  • baking powder – adds lift to the muffin batter.
  • salt – gives flavor and balances out the sweetness.
  • creamy peanut butter – adds flavor and moisture
  • bananas – the riper, the better!

It’s not hard to whip up a batch of these homemade peanut butter banana chocolate chip muffins!

Step One: Preheat Oven and Prepare Muffin Tins

  1. Preheat oven.
  2. Prepare muffin tins.

Step Two: Make Muffin Batter

  1. In a large bowl, whisk together the flour, oats, flaxseed, baking powder, and salt.
  2. In a separate bowl, beat together the peanut butter, bananas, brown sugar, and sugar.
  3. Then add in the eggs, vanilla, and milk.

USE VERY RIPE BANANAS

My number one tip when making these Peanut Butter Banana Chocolate Chips muffins? Use very ripe bananas. Extra ripe bananas always make the absolute best baked goods. I usually buy a bunch and set them aside until they are brown and spotty.

If you don’t want to wait for your bananas to ripen, there are a few hacks to ripen your bananas fast you can try.

FILL LINERS ALMOST FULL

Spoon the batter evenly into the liners. You are going to fill the liners almost full – about 3/4 of the way. This leads to nicely rounded muffins.

CAN I USE INSTANT OATMEAL INSTEAD OF QUICK COOK?

No. Instant Oatmeal is cut way too fine, and is definitely not recommended for baking. Use either Quick or Old Fashioned Oats, instead.

WHY ARE MY MUFFINS DENSE?

There are several reasons why muffins can come out too dense. One is that there is too much liquid in the batter. The other is that there is too much leavening – such as baking soda or powder in the batter.

Another reason is that the batter was overmixed. This is an important tip to remember with almost all the things you bake. Over-mixing the ingredients can create dry, tough muffins. It can also result in your muffins baking unevenly, or coming out with tunnels and/or ugly, peaked tops.

WHAT’S THE SECRET TO MAKING MOIST MUFFINS? WHY DO MY MUFFINS COME OUT DRY AND CRUMBLY?

The main causes of dry, hard, and/or crumbly muffins are over-mixing the batter and overcooking the muffins. So be careful not to overmix the batter. And do not overcook.

Also, never let the muffins remain in the tins for too long after you remove them from the oven. The peanut butter banana chocolate chip muffins will actually continue to cook inside the hot tins. So remove them from the tins after three to four minutes and put them on a rack to finish cooling.

HOW TO STORE PEANUT BUTTER BANANA CHOCOLATE CHIP MUFFINS

If you’re lucky enough to have any leftovers (remember what I said about gone in the blink of an eye, lol?), you can store these tasty muffins for 2-3 days. Simply keep them in an air-tight, sealed container at room temp.

You can also freeze them in a tightly sealed freezer bag. When ready to eat, simply eat straight from the freezer or microwave for 10 seconds.

Ingredients

  • 2 bananas, mashed
  • ¼ cup flax seed, ground
  • ¼ cup brown sugar
  • ¼ cup sugar
  • 1 cup peanut butter
  • 2 eggs
  • 1 cup milk
  • 1 cup quick cooking oats
  • 1 cup mini chococlate chips
  • 1 tsp salt
  • 2 tsp baking powder
  • 2½ cups flour
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375 degrees and grease a muffin pan with nonstick cooking spray or add muffin liners.
  2. In a large bowl, whisk together the flour, oats, flax seed, baking powder, and salt. Set aside.
  3. In a separate bowl, beat together the peanut butter, bananas, brown sugar, and sugar.
  4. Add in the eggs and vanilla and beat until combined. Mix in the milk.
  5. Add the flour mixture to the peanut butter mixture and mix until combined.
  6. Gently fold in the chocolate chips.
  7. Fill each muffin cup ¾ of the way full with batter and bake in the preheated oven. Bake for 20 to 25 minutes for full-size muffins or 18 to 22 minutes for mini muffins.
  8. Allow to cool in pan for 5 minutes, then transfer to a wire cooling rack to cool completely before serving.
