Sausage, Egg and Herbed Cheese Breakfast Muffins
Ingredients
1 package (8 patties) of Jimmy Dean® Fully Cooked Pork Sausage Patties, quartered
1 package (8 biscuits) refrigerated biscuits, cut in half
4 eggs
1/4 cup milk
1/4 cup shredded sharp cheddar cheese
1/4 tsp kosher salt
1/4 tsp pepper
1/2 tsp each rosemary, sage, thyme
Instructions
Begin by preheating the oven to 400 degrees, then spray one 12-cup muffin tin with non-stick baking spray.
Next, place one half of a biscuit in each muffin tin and gently press to the bottom and up along the sides, making a cup.
Here’s the best part, making the sausage! Because we are using Jimmy Dean® Fully Cooked Pork Sausage Patties, all you have to do is remove them from the packaging, then slice each patty into quarters. No having to cook them first because they are already fully cooked! Love it!
Now, place a quarter of a sausage patty into each cup on top of the biscuit.
Next, in a small bowl, whisk together the eggs, milk, cheese, salt, pepper, and herbs.
Then add about 1/8 cup of the egg mixture on top of the sausage in each cup.
Now top with a little extra cheese, then place in the oven and bake at 400 degrees for 15-18 minutes, or until the egg is completely cooked.
Once finished baking, remove from the oven, serve warm and enjoy!
