A stir-fry is a quick and versatile option that can be adapted based on whatever ingredients you have on hand. Start by cutting the chicken into small pieces and cooking it in a large pan or wok with a little oil over medium-high heat until it’s just cooked through. Remove the chicken and set it aside.

In the same pan, add a variety of chopped vegetables like bell peppers, broccoli, carrots, and snap peas. Stir-fry the vegetables until they’re tender-crisp, then add the chicken back to the pan. Pour in a simple sauce made from soy sauce, garlic, and a spoonful of honey or sugar for a touch of sweetness.
