Almond Biscotti and McCafé Coffee: The Perfect ‘Me Time’ Treat
I am not a morning person. Despite this, I still find myself getting up with the alarm everyday at 5:00 am in order to get my husband off to work, and our son off to school or camp. First up, I hit the kitchen to prepare my husband’s breakfast and pack his lunch for work. As soon as he is out the door, it’s time to get our son up. After telling him multiple times to get out of bed, it’s back to the kitchen to prepare his breakfast, pack his lunch and make sure he has everything he needs for the day.
By the time I drop him off and head back home to prepare for my day, I am in desperate need of a few minutes of ‘me time’. And nothing makes for a better ‘me time’ treat then a piping hot cup of McCafé coffee! Well nothing that is except for a couple of pieces of delicious homemade almond biscotti to dunk in that coffee!
Speaking of coffee, did you know that McCafé coffee is made from 100% Arabica beans, and harvested from the rich soils of mountainous areas of the world? I didn’t, in fact I had never had McCafé coffee until I attended a demo at my local Walmart where I had the opportunity to sample a freshly brewed cup of McCafé French Roast coffee for myself. The flavor was so rich and delicious, I bought a box of McCafé coffee pods right then and there!
In addition to the rich, deep flavor, the low price makes McCafé coffee hard to beat! I have been a coffee lover for years, and I truly believe this rivals some of the more expensive brands. My favorite flavor so far is the French Roast variety, and I am looking forward to trying some of the others!
Almond Biscotti Recipe and McCafé
Remember that biscotti I mentioned above? Why not give it a try for yourself! These crunchy cookies practically melt in your mouth when dunked in a hot cup of coffee! Treat yourself to some ‘me time’ today with McCafé coffee and some homemade Almond Biscotti!
Here’s what you’ll need:
– 2 cups all purpose flour
– 1 cup sugar
– 1 teaspoon baking powder
– 1/8 teaspoon salt
– 3 large eggs
– 2 tablespoons pineapple juice
– 1 teaspoon vanilla extract
– 1 teaspoon almond extract
– 1 cup sliced almonds, toasted for just a few minutes
Begin by preheating the oven to 300° F and lining two baking sheets with parchment paper. The parchment paper makes it much easier to remove the cookies once they are finished! Next, in a medium bowl, combine the flour, sugar, baking powder, salt and almonds. Mix well, then set to the side.
In another larger mixing bowl, whisk the eggs, almond extract, vanilla extract, and pineapple juice until well blended.
Now add in the dry ingredients and mix until completely combined. At this point the dough will be very thick and sticky–don’t worry, this is exactly how it should be. Do NOT add more flour!
Now you want to scrape the dough out onto one of the parchment lined cooking sheets. Slightly moisten your hands with water (this helps keep the dough from sticking to your hands) and shape the dough into a long, flat loaf approximately 10 inches long and 5 inches wide. It most likely will not look very pretty, but that is absolutely fine!
Place the dough into the oven and bake for about 50 minutes at 300° F. As soon as the dough has finished baking, remove it from the oven and let it cool for about 10 minutes. Once cooled, take a long, serrated knife, and cut the dough into 1/2 inch wide slices.
Place the slices cut side down on the second parchment paper lined baking sheet, return it to the oven and bake for 10 to 15 minutes more. Then turn the slices over and bake for another 10 to 15 minutes, or until the cookies are light golden brown. When finished, let the biscotti cool on a rack. As soon as it has cooled, serve with a cup of coffee for dunking and enjoy!
And there you have it – a tasty biscotti that together with a hot cup of coffee, makes the perfect ‘me time’ treat! One of my favorite things about this recipe is its flexibility. You can switch out the almonds for practically anything you like: dried cranberries, raisins, pecans or walnuts. Or you can dip the finished cookies in melted dark or white chocolate for an extra sweet treat. The possibilities are endless! Just don’t forget your cup of McCafé coffee for dunking!
