I love cheese! And what better way to end National Cheese Lovers Day than with a delicious, cheesy dinner recipe like Shrimp Monterey!

One of my favorite things about this recipe is that it is super quick and easy to make, yet it tastes like you spent hours laboring over a hot stove!

Shrimp Monterey
Ingredients
3 garlic cloves, minced
2.5  tablespoons butter
1 pound uncooked medium shrimp, peeled and deveined
3/4  cup white wine or chicken broth
2 cups (8 ounces) shredded Monterey Jack cheese
2 tablespoons minced fresh parsley

Directions
Begin by sauteing the freshly minced garlic in butter for 1 minute over medium heat.
Next, add the shrimp and cook for 4-5 minutes or until pink.

Using a slotted spoon, transfer shrimp to a greased baking dish, then set aside and keep warm.
Add the cooking wine to the skillet and bring to a boil.
Cook and stir for 5 minutes or until sauce is reduced.
Pour over shrimp; top with cheese and parsley.

Bake, uncovered, at 350° for 10 minutes or until cheese is melted.
Serve and enjoy!
Tip: serve over white rice or pasta!
