School’s only been out a few weeks, but already summer boredom is beginning to set in. One of my favorite ways to keep kids entertained is by creating fun and fantastic recipes that they can not only eat but can also help make. And these delectable Chocolate Chip Cookie Dough Cheesecakes are the perfect recipe to start your kitchen adventures!

Served in individual, small-sized mason jars, these Chocolate Chip Cookie Dough Cheesecakes are incredible easy to make. And best of all, there is no baking involved. All you need is a few common ingredients and about 15 to 20 minutes. There is an hour of ‘chilling’ time, but these treats are well worth the quick wait!

Ready to see how to make these sweet summer treats?

Ingredients

  • 12 chocolate chip cookies
  • 2 tablespoons butter
  • 2 (8 oz) packages cream cheese at room temperature
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 2/3 cup brown sugar
  • 3/4 cup mini chocolate chips
  • Mini chocolate chip cookies or larger cookies cut into pieces for topping

Instructions

Using a food processor, blend the cookies with the butter in order to create the cookie dough crust. Press a tablespoon and a half of this mixture into the bottom of each jar; making sure to press firmly so the mixture is nice and firm in the bottoms of the jars.

chocolate chip cookie dough cheesecakes blend butter and cookies for crustNext, using your mixer’s whisk attachment, whip the cream cheese until smooth. Slowly add in the brown sugar mixing until completely blended, then add the vanilla extract and the heavy cream. Whip until fluffy and light.

Next, stir in 1/2 cup mini chocolate chips.

Now spoon this mixture into the jars over the cookie crust.

Finally, top the jars off with a sprinkling of chocolate chips and a small cookie. Chill completely – at least an hour.

Chilling Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 12 chocolate chip cookies
  • 2 tablespoons butter
  • 2 8 oz packages cream cheese at room temperature
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract
  • 2/3 cup brown sugar
  • 3/4 cup mini chocolate chips
  • Mini chocolate chip cookies or larger cookies cut into pieces for topping
