Growing up, my sister and I were raised by our father. Although he worked all day and often through the night at his restaurant, he always made sure to be home to cook dinner – even if he had to return to work afterwards. Every night, we’d sit down to dinner at the kitchen table as a family and enjoy one of his delicious dishes. He made sure we always had that classic family dinner where the most important ingredient was love.
Now that I’m a parent myself, I want to do the same for my family. Regardless of our busy schedules, my goal is to bring us together around the kitchen table to enjoy a home cooked meal. As a cheese loving family, many of those home cooked meals have cheese incorporated in some way. And one of our favorites is Chicken Cordon Bleu.
While I love making classic Chicken Cordon Bleu, sometimes I want – and need – an easier way. Less work with all the same savory flavor. This easier Chicken Cordon Bleu recipe is just as satisfying as the original, but without all the excess fuss. While it tastes like you spent hours preparing it, in actuality, it is simple and quick. My family goes nuts over this meal, and I think yours will, too!

To make Easy Chicken Cordon Bleu you will need:
4 skinless, boneless chicken breast halves
1/4 tsp paprika
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tbsp melted butter
8 – 10 slices Borden® Cheese Swiss Slices
4 slices cooked ham (sandwich slices work well, too!)
1/2 cup Italian seasoned bread crumbs
Directions to make Easy Chicken Cordon Bleu
- Preheat the oven to 350 degrees F. Coat a 9×13 inch baking dish with nonstick cooking spray.
- Pound the chicken breasts to 1/4 inch thickness. I place each breast between two pieces of plastic wrap and then use either a meat mallet or rolling-pin.
- Sprinkle each piece of chicken on both sides with salt, pepper and paprika.
- Place 1 slice of ham, and 2 (or more!) of the Borden® Cheese Swiss Slices on top of each breast.
- Then roll up each breast, and secure with a toothpick.
- Melt 2 tablespoons of butter in a large bowl. Dip both sides of each chicken breast in the melted butter and then dredge it through the breadcrumbs making sure to evenly coat both sides.
- Place the chicken in the baking dish and bake for 30 to 35 minutes, or until the chicken is no longer pink and the juices run clear.
- Remove from the oven and top each breast with a 1/2 slice of cheese, then return to the oven for 3 to 5 minutes, or until the cheese is completely melted.
- Remove the toothpicks and serve immediately.

This does look fairly simple. I wish I were better at pounding the chicken down into a very thin piece. I know that’s essential to be able to roll up the chicken and then putting a tooth pick in holding it all togeter. Does look delicious though.
