I don’t know about you, but coffee and vanilla are a flavor match made in heaven! And if you like vanilla flavored coffee and cookies, then you are going to LOVE these delicious French Vanilla Coffee Sandwich Cookies! Made with real vanilla and French Vanilla Coffee, these delectable sandwich cookies taste absolutely amazing. Best of all, they are a cinch to make!
French Vanilla Coffee Sandwich Cookies
Makes 25 – 30 cookies.
Ingredients
1 cup butter softened
1 1/2 cups granulated sugar
2 eggs
2 tablespoons fresh French Vanilla ground coffee (you can also use instant crystals or powder)
1/2 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt (I used kosher)
Frosting Ingredients
1/2 cup (1 stick) salted butter, room temp.
1 cup dark brown sugar
1/3 cup heavy cream
1/4 tsp salt
2-3 cups powdered sugar, sifted

Using a mixer, cream together the sugar and butter. If you don’t have a countertop mixer (aff. link), use a hand held electric mixer instead.
Next, in a separate small bowl, combine the eggs, vanilla, and coffee, mixing until fully incorporated.
In yet another bowl, whisk together the flour, baking powder, cinnamon, and salt.
Now, add the egg mixture to the butter mixture, and mix until completely combined.
Then slowly add in the flour mixture, mixing until combined, being careful not to over beat.
Chill this dough for at least one hour, although it’s best to do so overnight.
When you are ready to bake the cookies, preheat the oven to 350 degrees.
On a lightly floured solid surface, roll out the dough to about 1/2 inch thick.
Using a circle cookie cutter, punch out circles and place on baking sheet lined with either a silpat liner (aff link) or parchment. Use a spatula if the cookie rounds feel too flimsy.
Bake the cookies for 8-10 minutes, or until the edges are a light golden brown.
Then remove from oven and allow to cool completely before adding the icing.
Frosting Instructions
Melt the butter in a small saucepan on low heat.
Once the butter is melted, add brown sugar and heavy cream. Stir constantly over medium heat until sugar is dissolved.
Next, add the salt, stirring until combined.
Allow this mixture to bubble for about 2 minutes before removing from heat and allowing to cool (1 hour minimum).
Once cooled, slowly beat in powdered sugar 1 cup at a time, until you reach desired consistency.
Instructions for Icing Cookies
Using either an icing bag (aff. link) filled with frosting or a small spatula, frost one cookie, then top with another cookie to make a sandwich.
