Lately I’ve been obsessed with quick and easy desserts.  There’s no replacing a good collection of delicious, fun and quick go-to recipes – especially during the busy holiday season.

I’ve also been going a bit crazy with the chocolate dipped treats. Like these White Chocolate Covered Pretzels for Christmas, they were gone within minutes! I also made another amazing chocolate covered treat that I don’t want to share quite yet, but the recipe is coming soon. Promise! So what makes these white chocolate peppermint dipped marshmallows so perfect for special occasions? Well for one thing, they are quick and extremely easy to make. No baking and no special tools required.

For another, they’re dipped in chocolate and no party is complete without chocolate!  Add some pretty ribbon to the top of the stick and BAM! – you’ve got the perfect festive holiday treat! So fancy looking, so delicious, and so very simple.

White Chocolate Peppermint Dipped Marshmallows Recipe

This White Chocolate Peppermint Dipped Marshmallows recipe is extremely quick and easy. You don’t need a lot of time to make them, nor do you need any baking skills. Simply melt the chocolate, dip the marshmallows, and add the sprinkles.

I do recommend that you use high quality baking chips or almond bark and make sure to have some coconut oil on hand. This is because white chocolate is notriously hard to melt and keep from seizing. And it can rarely be saved once it reaches that point. Adding coconut oil and using high quality baking chocolate helps to eliminate this problem. Use 1 tsp of coconut oil to every 2 cups of chocolate chips.

In addition, I prefer using my Wilton Candy Pot to melt chocolate as it makes the entire process so much easier. Plus it keeps the chocolate warm so it doesn’t seize while dipping.

Ingredients to Make White Chocolate Peppermint Dipped Marshmallows

  • 12 – 14 large marshmallows
  • 1 cup white chocolate chips or almond bark – Ghirardelli or another high quality chocolate
  • 1/4 – 1/2 teaspoon peppermint extract
  • colorful Christmas-colored sprinkles
  • 12 lollipop sticks
  • 1- 2 tsps coconut oil (optional, helps keep chocolate from seizing)

How to Make White Chocolate Peppermint Dipped Marshmallows

Tip – if you ‘re not using a candy melting pot, make sure you use a container that is deep enough to allow the melted chocolate to cover the marshmallows half way when dipped. 

  1. Begin by lining a baking sheet with wax paper, parchment paper or a silicone baking mat.
  2. Next, add the white chocolate chips to a microwave safe bowl, double boiler or candy melting pot.
  3. Add in the peppermint extract, then melt the chips according to the instructions on the bag, stirring constantly to ensure they don’t overheat or burn.
  4. Once the chocolate is ready, dip the very tip of a lollipop stick into the chocolate, then stick that end into the marshmallow until it is about 3/4 of the way through. Repeat with the rest of the marshmallows, standing them up as you go.
  5. Next, working with one marshmallow at a time, dip it into the melted chocolate, making sure to coat it halfway. Gently tap to remove excess chocolate.
  6. Use your fingertips to cover the chocolate dipped marshmallow in sprinkles, then place on the baking sheet stick side up. Repeat with the remaining marshmallows.
  7. Place in the fridge or freezer for at least 30 minutes to allow the chocolate to set. When ready to serve or package as a gift, let the marshmallows sit at room temperature for 5 minutes.

Tip – They can be stored on the counter at least a week.
