Growing up, one of my favorite things about the holidays was homemade eggnog. We only made it once a year, and we were only allowed 2 or 3 glasses total, but oh my, was it ever so delicious!

Now as an adult, I’ve discovered another tasty way to enjoy that eggnog in another seasonal favorite – cookies!

Whether you’re making Hanukkah cookies or Christmas cookies, the holidays and cookies go hand in hand! Plus, there’s not much that beats the smell of baking cookies on a cold winter’s day. Especially when those cookies are my Eggnog Gooey Butter Cookies!

HOW TO MAKE EGGNOG BUTTER COOKIES

These semi-homemade Christmas cookies are very easy to make thanks to the use of Golden Butter cake mix. You can have an entire batch ready to go in 30 minutes from start to finish! They’re a perfect cookie recipe for the busy holiday season!

INGREDIENTS FOR GOOEY EGGNOG BUTTER COOKIES

For this easy eggnog gooey butter cookie recipe, you’ll need just a few simple ingredients including:

  • Golden Butter Cake Mix – I prefer Pillsbury’s
  • cream cheese – in addition to adding flavor, it helps make the cookies soft, moist, and chewy.
  • baking powder – helps the cookies rise.
  • butter – lends flavor and tenderness to the cookies.
  • powdered sugar – adds sweetness.
  • ground nutmeg – creates the eggnog flavor together with the rum extract.
  • rum extract – using a pure rum extract enhances the eggnog flavor in the recipe
  • egg – acts as a stabilizer for the cookies and works with the cake mix.

INSTRUCTIONS TO MAKE CHRISTMAS COOKIES

Making these delicious Christmas Cookies is pretty quick and easy.

Step One: Prep

  • Preheat the oven.
  • Line a large baking sheet.

Step Two: Cream

  • In a large mixing bowl, add the cream cheese and butter. Cream until smooth.

Step Three: Add Egg and Nutmeg

  • Add the egg and nutmeg and mix well.

Step Four: Add Rum Extract

  • Stir in the rum extract.

Step Five: Add in Cake Mix and Baking Powder

  • Add the cake mix and baking powder and stir until all of the ingredients are well incorporated.

Step Six: Chill

  • Cover and chill for 30 minutes for easier handling.

Step Seven: Scoop Into Balls

  • Use a cookie scoop or tablespoon to scoop the dough into 2-inch balls and then roll them in powdered sugar before placing them on the prepared baking sheet at least 2-inches apart.

Step Eight: Bake

  • Bake at 350° for 10-12 minutes. Do not allow the cookies to brown. They should be soft and a bit gooey on top when you take them out of the oven.

Step Nine: Cool

  • Allow the cookies to cool on pan then transfer to cooling rack.

Step Ten: Sprinkle with Powdered Sugar

  • Sprinkle additional powdered sugar on the cookies, if desired.

Eggnog Gooey Butter Cookies

Ingredients

  • 8 oz brick of cream cheese, softened at room temperature
  • 1/2 cup butter, 1 stick, softened at room temperature
  • 1 large egg
  • 1 teaspoon ground nutmeg
  • 2 teaspoons rum extract
  • 1 Pillsbury Golden Butter cake mix
  • 2 teaspoons baking powder
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°. Line a large baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, add the cream cheese and butter. Cream until smooth.
  3. Add the egg and nutmeg and mix well.
  4. Stir in the rum extract.
  5. Add the cake mix and baking powder and stir until all of the ingredients are well incorporated.
  6. Cover and chill for 30 minutes for easier handling.
  7. Once chilled, roll the cookie dough into 2 inch balls and then roll them in powdered sugar. Place on the lined baking sheet, at least 2 inches apart.
  8. Bake at 350° for 10-12 minutes. Do not allow the cookies to brown. They should be soft and a bit gooey on top when you take them out of the oven.
  9. Allow the cookies to cool on the pan for 5 minutes before transferring them to a wire rack.
  10. Sprinkle additional powdered sugar on the cookies, if desired.
  11. ENJOY!!
  12. *Store in an airtight container for up to 2 weeks.
