I’ve always been a blueberry fan. Whether they are part of a recipe or on their own, I absolutely love the way they taste! So when I saw a bunch of gorgeous plump and juicy blueberries at the farmer’s market the other day, I just couldn’t resist!

I mean really…it’s hard to go wrong when croissants are involved. And when they’re whipped up into a delectable bread pudding with fresh, plump, juicy blueberries….well, it’s pretty much game over!

This blueberry croissant bread pudding recipe is one of the easiest things I’ve made. You can have it put together and in the oven in about 10 minutes. And 40 to 50 minutes later, you’ll have a warm, flavorful treat everyone will love!

Ingredients Needed to Make Blueberry Croissant Bread Pudding

I love how this bread pudding is so easy to make. In my opinion, compared to other bread puddings, this croissant version gives a much flakier and crispier crust!

Can’t find any fresh blueberries? You can use frozen blueberries instead. Simply place them in a bowl of cold water for 3 to 4 minutes to thaw then lightly pat them dry with paper towels.

How to Serve Blueberry Croissant Bread Pudding

This bread pudding is delicious served warm for breakfast or dessert… and it’s even good cold! It can be served in so many different ways, too.

Serve it topped with a sprinkle of powdered sugar or with more fresh blueberries. A dollop of whipped cream or a drizzle of maple syrup would also be so yummy! Although none of that is necessary as this buttery bread pudding is delicious on its own!

If you’re not a fan of blueberries or in the mood for another flavor, I bet any fruit would be fabulous in this. Think raspberries, blackberries, or even cherries!

Storing Croissant Bread Pudding

Although this bread pudding is delicious, I doubt you’ll eat it all in one sitting. Luckily, you can keep it in an air-tight container in the refrigerator for up to 3 days.

Leftovers can be reheated in the oven at 350˚F. Cover with foil and bake until warmed through – usually about 15 minutes.

Cook Time 50 minutes
Total Time 1 hour

Ingredients

  • 6 croissants
  • 2 eggs
  • ⅔ cup white sugar
  • 2 cups half and half cream
  • ½ tsp salt
  • 1 cup fresh or frozen blueberries
  • powdered sugar, optional

Instructions

  1. Preheat oven to 325 degrees. Roughly chop up croissants into large cubes and mix with one cup of frozen blueberries in an 8 x 8 baking dish.
  2. In a large bowl whisk together the eggs, half and half, sugar, and salt then pour over the blueberry croissants mixture.
  3. Press the croissants mixture down to make sure it is evenly soaked with the egg mix.
  4. Bake in the oven for 40-50 minutes or until a toothpick comes out clean in the middle.
  5. Serve warm with a sprinkle of powdered sugar or a dollop of whip cream. Enjoy!
