I know, I know. Unicorn this and unicorn that. It’s hard to believe that after several years this fad is still going strong! But why shouldn’t it? There is nothing wrong with introducing a bit of magic into our lives – especially during adulthood. 😉

HOW TO MAKE UNICORN POOP COOKIES

Like the majority of my recipes, this unicorn-themed dessert is very easy to make. Yes, there are several different (simple) steps, but if you can use a mixer, then you will have no problem making these adorable unicorn poop cookies!

INGREDIENTS YOU WILL NEED TO MAKE UNICORN POOP COOKIES

These Unicorn Poop Cookies are made with a delicious sugar cookie recipe with crushed Oreos mixed in, then made extra-fun with frosting, chocolate ganache, sprinkles and your imagination.

The ingredients below are divided into four groups: the cookies, the frosting, the chocolate ganache, and the ingredients you will need to decorate the cookies. Hopefully this will make it easier for you to see exactly what you need.

For the Cookies

  • unsalted sweet cream butter, softened
  • light brown sugar
  • sugar
  • eggs – these need to be at room temperature, so leave them out for at least 30 minutes before starting.
  • pure vanilla extract
  • flour
  • crushed Oreo cookies
  • salt
  • baking powder

For the Frosting

  • unsalted sweet cream butter, softened
  • powdered sugar
  • pure vanilla extract
  • heavy whipping cream

For the Chocolate Ganache

  • chocolate chips
  • heavy whipping cream

For Decorating

If you can no longer find the Wilton Unicorn Cupcake Decorating Kit (aka Wilton Unicorn Icing Decorations), use Wilton Unicorn Horn Sprinkles instead.

INSTRUCTIONS TO MAKE UNICORN POOP COOKIES

Making these incredibly cute cookies is much easier than you’d think! Just as I did with the ingredients, I split the directions into four main sections: the cookies, the frosting, the ganache, and finally decorating (aka putting it all together).

To Make the Cookies

Step One: Prep

  • Preheat oven to 350 degrees and line two cookie sheets with parchment paper

Step Two: Make Cookie Dough

  • Using a standing mixer, beat the butter, brown sugar, sugar, eggs and vanilla until combined
  • Whisk the flour, crushed oreo cookies, salt and baking powder in a medium bowl
  • Gradually beat in the dry ingredients into the wet until a soft dough forms

Step Three: Bake

  • Using a small cookie scoop, scoop dough onto the cookie sheets
  • Bake in the oven for 12-15 minutes or until a light golden brown color

Step Four: Cool

  • Allow the cookies to cool completely.

To Make the Frosting

Step One: Combine Ingredients and Beat

  • Using a standing mixer, beat the butter, powdered sugar, vanilla and heavy whipping cream until
  • combined, smooth and holds a peak

Step Two: Add in Icing Bags

  • Scoop 1 cup of frosting into the piping bag with the star tip
  • Scoop the remaining frosting into the other piping bag

To Make the Chocolate Ganache

Step One: Simmer

  • Using a small pot, bring the heavy whipping cream to a simmer

Step Two: Pour Over

  • Pour over the chocolate chips in a small bowl and let stand for 1 minute

Step Three: Whisk

  • Whisk until smooth

Putting It All Together

Step One: Pipe 1st Frosting Layer

  • Pipe a thick layer of frosting onto the top of the cookie and smooth evenly.

Step Two: Add Chocolate Ganache

  • Scoop some chocolate ganache onto the center of the frosting and lightly spread

Step Three: Add Second Frosting

  • Pipe a small dollop of frosting on top of the ganache

Step Four: Add Sprinkles

  • Sprinkle some of the sprinkles on top.

Step Five: Add the Horn and Ears

  • Place the unicorn icing horn and ears from the decorating kit into the center of the frosting.

Step Six: Let Set

  • Let cookies sit before serving for about 15 minutes so the icing and ganache will set.

And that’s it! You’re done! Aren’t they super cute?!

HOW TO STORE UNICORN POOP COOKIES

These Unicorn Poop Cookies can be stored in an airtight container. They will keep at room temperature for up to a week.

Ingredients

For the Cookies

  • 1 C unsalted sweet cream butter, softened
  • 1 1⁄2 C light brown sugar
  • 1 C sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 3 C flour
  • 2 C crushed Oreo cookies
  • 1 tsp salt
  • 1 tsp baking powder

For the Vanilla Frosting

  • 1⁄2 C unsalted sweet cream butter, softened
  • 2 C powdered sugar
  • 1 tsp pure vanilla extract
  • 3-5 tbsp heavy whipping cream

For Chocolate Ganache

  • 1⁄2 C chocolate chips
  • 1⁄4 C heavy whipping cream

Instructions

For the Cookies

  1. Preheat oven to 350 degrees and line two cookie sheets with parchment paper
  2. Using a standing or hand-held mixer, beat the butter, brown sugar, sugar, eggs and vanilla until combined
  3. In a separate medium bowl, whisk the flour, crushed Oreo cookies, salt and baking powder.
  4. Gradually beat in the dry ingredients into the wet until a soft dough forms.
  5. Using a small cookie scoop, scoop dough onto the cookie sheets about 2 inches apart.
  6. Bake in the oven for 12-15 minutes or until a light golden-brown color
  7. Allow the cookies to cool completely.

For the Vanilla Frosting

  1. Using a standing mixer or a hand mixer and large bowl, beat the butter, powdered sugar, vanilla and heavy whipping cream until it's thoroughly combined, smooth, and holds a peak.
  2. Scoop 1 cup of frosting into the piping bag with the star tip.
  3. Scoop the remaining frosting into the other piping bag.

For the Chocolate Ganache

  1. Using a small pot, bring the heavy whipping cream to a simmer.
  2. Immediately pour the simmering whipping cream over the chocolate chips in a small bowl and let stand for 1 minute.
  3. Whisk until smooth.


Putting It All Together

  1. Pipe a thick layer of frosting onto the top of a cookie and smooth evenly.
  2. Scoop a small amount of the chocolate ganache onto the center of the frosting and lightly spread.
  3. Pipe a dollop of frosting on top of the ganache.
  4. Sprinkle some of the sprinkles on top.
  5. Place the unicorn horn and ears icing transfer into the center of the frosting on each cookie.
